Ingredients
- 4 fish fillets (cod, pollock, or similar white fish)
- 2 tomatoes
- 1 onion
- 2 garlic cloves
- 1 lemon
- 3 tablespoons olive oil
- Fresh parsley
- Salt
- Black pepper
Instructions
1. Preheat your oven to 180°C (355°F).
2. Thinly slice the onion, cut the tomatoes into rounds, and finely chop the garlic.
3. Drizzle a little olive oil into the baking dish. Spread the onion and garlic evenly across the bottom.
4. Arrange the fish fillets on top of the onion mixture.
5. Place the tomato slices over the fish.
6. Squeeze the lemon and drizzle the juice evenly over the dish.
7. Season with salt and black pepper, then finish with another drizzle of olive oil.
8. Bake for about 20 minutes, or until the fish is tender and flakes easily with a fork.
9. Sprinkle with freshly chopped parsley just before serving.
