Ingredients

  • 1 kg beef for pot-au-feu (stewing beef)
  • 4 carrots
  • 3 leeks
  • 4 potatoes
  • 1 onion
  • Whole cloves
  • Salt and black pepper

Instructions

  • 1. Place the beef in a large stockpot and cover generously with cold water.
  • 2. Bring to a boil over medium heat. Foam will rise to the surface.
  • 3. Carefully skim off the foam with a skimmer to obtain a clear broth.
  • 4. Reduce the heat and maintain a gentle simmer—never a rolling boil.
  • 5. Add the onion studded with cloves, the carrots, and the leeks.
  • 6. Season lightly with salt and simmer gently for 2 hours 30 minutes.
  • 7. Add the potatoes and continue cooking for another 30 minutes.
  • 8. Adjust the seasoning before serving.
