Ingredients

  • 1 whole chicken, cut into pieces
  • 750 ml red wine
  • 200 g bacon lardons
  • 2 carrots
  • 1 onion
  • 1 bouquet garni
  • Salt and black pepper

Instructions

  • 1. Brown the chicken pieces in a Dutch oven with a drizzle of oil until golden on all sides.
  • 2. Remove the chicken and sauté the bacon lardons, onion, and carrots.
  • 3. Return the chicken to the Dutch oven.
  • 4. Pour in the red wine until the chicken is covered.
  • 5. Add the bouquet garni, then season with salt and black pepper.
  • 6. Cover and simmer gently over low heat for about 2 hours.
  • 7. Check that the chicken is perfectly tender before serving.
