Ingredients

  • 300 g rice
  • 2 chicken breasts
  • 1 onion
  • 1 carrot
  • 2 eggs
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • Salt and black pepper
  • Fresh parsley or chives (optional)

Instructions

  • 1. Cook the rice in a large saucepan of salted boiling water according to the package instructions.
  • 2. Drain the rice and let it cool slightly. For the best results, use cold leftover rice.
  • 3. Cut the chicken breasts into small, evenly sized pieces.
  • 4. Peel the carrot and dice it into small cubes.
  • 5. Finely slice the onion.
  • 6. Heat the oil in a large frying pan or wok.
  • 7. Stir-fry the chicken for about 5 minutes until lightly browned.
  • 8. Add the onion and carrot, then cook for another 3 to 4 minutes.
  • 9. Push the mixture to one side of the pan and crack the eggs directly into the empty space.
  • 10. Scramble the eggs quickly, then mix them with the chicken and vegetables.
  • 11. Add the cold rice to the pan.
  • 12. Pour in the soy sauce, stir well, and cook for another 3 to 5 minutes.
  • 13. Adjust the seasoning with salt and black pepper.
  • 14. Sprinkle with fresh parsley or chives before serving.
