Ingredients
- 1 liter water
- 2 tablespoons miso paste
- 1 carrot
- 1 small zucchini
- 100 g mushrooms
- 1 handful fresh spinach
- 1 spring onion
- Sesame seeds
Instructions
- Wash the carrot and slice it into thin rounds.
- Cut the zucchini into small, even cubes.
- Slice the mushrooms thinly.
- Heat the water in a saucepan until it begins to simmer.
- Add the carrots and cook for 3 minutes.
- Add the zucchini and mushrooms.
- Continue cooking for another 4 to 5 minutes, until the vegetables are tender.
- Reduce the heat, then stir in the miso paste gently until dissolved.
- Add the fresh spinach and cook for 1 minute.
- Stir in the finely sliced spring onion.
- Serve immediately, sprinkled with sesame seeds.
