Ingredients
- 500 g pork (ground or diced)
- 200 g veal or poultry
- 150 g pork back fat
- 2 eggs
- 1 shortcrust or pâté pastry
- 1 shallot
- 50 ml Cognac or dry white wine
- Salt, pepper, and quatre-épices seasoning
Instructions
- 1. Cut the meats into small, even pieces or coarsely grind them to maintain texture.
- 2. Finely chop the shallot.
- 3. In a large bowl, combine the meats, pork fat, eggs, shallot, alcohol, and seasonings.
- 4. Mix thoroughly by hand or with a spatula until the filling is evenly combined.
- 5. Refrigerate the filling for 30 minutes to allow the flavors to develop.
- 6. Roll out the pastry and line the mold, leaving enough pastry hanging over the edges.
- 7. Fill with the meat mixture, pressing firmly to eliminate air pockets.
- 8. Cover with another sheet of pastry, seal the edges, and create a steam vent in the center.
- 9. Brush the top with egg wash for a beautiful golden finish.
- 10. Bake at 180°C (355°F) for approximately 1 hour 30 minutes.
- 11. Allow to cool completely before unmolding and slicing.
